- 4 slices Bacon
- 1 Tbsp vegetable oil
- 1 Red onion
- 250 grams Cheshire cheese
- 1 Multigrain baguette
- 2 Tbsps olive oil
- 100 grams Watercress
- 1 Orange (juiced)
- 1 Tbsp grainy Mustard
- 1 tsp honey
- 1 Tbsp Nut oil
- salt
- Red pepper flakes

Preparation steps

Cut bacon into small cubes. Heat oil in a pan and cook bacon until crispy. Drain on paper towels. Peel onion and cut into narrow strips. Cut cheese into thin slices. Cut baguette into 2 cm (approximately 3/4 inch) thick slices and place on a lined with parchment paper baking sheet. Brush with olive oil and sprinkle with bacon and onion. Sprinkle with cheese and bake in preheated oven at 180°C (approximately 350°F) for about 10 minutes.

Rinse watercress and shake dry. Whisk orange juice with mustard, honey and nut oil, season with salt and red pepper.

Toss waercress with the dressing. Serve bread with watercress salad.
