1 kilogram waxy potatoes
2 Tbsps olive oil
salt (and pepper)
50 grams Bacon (thinly sliced)
fresh Sage
3 Tbsps grated Parmesan

Preparation steps

1.

Rinse and peel potatoes. Cut thin slices in potato, leaving one side and shape of potato intact. Place potatoes in a greased baking dish. Sprinkle with salt, pepper and olive oil, then arrange rolled bacon slices on top.

Preheat oven to 200°C (approximately 400°F). Bake potatoes for about 50 minutes. Sprinkle with rendered bacon fat in dish. Rinse sage leaves and shake dry. Spread sage leaves over potatoes during last 10 minutes of cooking. Serve with Parmesan.
