30 grams Pastry flour
350 milliliters milk
freshly ground peppers
Nutmeg (freshly grated)
100 grams freshly grated Mountain cheese
2 Tbsps parsley (cut into strips)

Preparation steps

1.

Preheat oven to 200°C (approximately 400°F).

Rinse, trim ends and quarter endives lengthwise. Blanch leaves in salted boiling water, 1-2 minutes. Drain and rinse with cold water. Place in a buttered baking dish.

Cut bacon into thin strips and fry in a pan and until lightly crispy. Drain on paper towels. Divide over endive leaves.

Melt butter in a saucepan. Sprinkle with flour, cook until bubbly, and add milk. Cook over medium heat, stirring constantly until thickened, about 5 minutes. Season with salt, pepper and nutmeg. Pour sauce over endives and sprinkle with cheese. Bake 20-25 minutes.

5.

Serve sprinkled with parsley.
