400 grams cooked potatoes
1 Kohlrabi
1 red Bell pepper
1 onion (finely chopped)
2 garlic cloves (pressed through a garlic press)
3 Tbsps olive oil (plus more for the baking dish)
1 tsp thyme
8 eggs
100 milliliters milk
½ tsp Curry powder
½ tsp ground paprika
salt
freshly ground peppers

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Grease a baking dish. Peel the kohlrabi and cut into thin sticks.

2.

Rinse the pepper, halve lengthwise, remove the seeds and white ribs and cut into cubes.

3.

Slice the potatoes.

4.

Peel and finely chop the onion.

5.

Heat the oil in a skillet and sauté the onion until translucent. Add the kohlrabi and bell pepper and saute a few minutes. Add the potato slices, pressed garlic and thyme and sauté everything briefly, add salt, then place in the baking dish.

6.

Whisk the milk and eggs with the spices and pour over the vegetable mixture.

7.

Bake until golden brown and set, about 35 minutes.

8.

Remove, cut into cubes, insert a wooden skewer into each cube and serve.
