This baked gnocchi is packed with protein from both the meatballs and cheese, as well as calcium from the dairy. That said, it's high in calories and fat, so make sure to eat it in moderation.
If you're vegetarian, you can leave out the meatballs or replace them with a plant-based alternative.

- 1 Tbsp olive oil
- 8 cooked Swedish meatballs
- 2 cloves garlic cloves (crushed)
- 3 cups Gnocchi
- 1 ⅛ cups Mascarpone
- ⅜ cup milk
- 12 cherry Tomatoes
- ¼ cup Cheddar cheese (grated)
- To garnish
- 1 Tbsp Chives (chopped)
Preparation steps
1.
Heat the oven to 400°F. Heat the oil in a large skillet and add the meatballs and garlic. Fry for 10 minutes, turning until browned all over.

Bring a large pan of salted water to the boil. Add the gnocchi, return to the boil and cook for 3 minutes. Drain.

Tip the meatballs and garlic into an ovenproof dish and add the gnocchi and cherry tomatoes.
4.
Gently warm the mascarpone in a pan with the milk, season and stir until smooth.
5.
Pour the mascarpone mixture over the meatballs, gnocchi and tomatoes. Sprinkle over the cheddar cheese.
6.
Bake for 20 minutes until thoroughly warmed through.
7.
Garnish with chopped chives to serve.
