½ cup unsalted butter
¼ cup superfine caster sugar
1 cup all-purpose flour (scant)
0.333 cup Almond flour
0.333 cup Fig Jam
2 Figs (thinly sliced)

Preparation steps

Beat together the butter and sugar in a mixing bowl, then add the flour and ground almonds. Mix to a soft dough. Wrap in cling film and chill for 1 hour.

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
3.
Knead the dough lightly on a lightly floured surface. Roll out the dough and cut out 10-12 rounds with a crimped edge cutter.

Place on the baking tray and brush with jam. Press a slice of fig onto the top of each cookie.
5.
Bake for 10-15 minutes until just golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
6.
Decorate with cardamom pods.
