Preparation steps

1.

Rinse endives and cut out cores in a wedge shape. Bring a pot of salted water to a boil. Add endives and blanch 3 minutes. Lift endives out of the water and plunge in a bowl of ice water. Drain well. In a pot, heat butter until melted. Sprinkle in flour, sauté briefly, and slowly stir in milk.

Add cheese to pot and cook over low heat until melted. Season with salt and pepper. Coat a baking dish with butter. Wrap each endive with a slice of ham and place in baking dish. Pour cheese sauce over the top. Bake in an oven preheated to 200°C (approximately 400°F), 15-20 minutes.
