Preparation steps

Preheat the oven to 400°F.

Rinse and trim the endive. Halve lengthwise and blanch for 4 minutes in boiling water. Remove and place in a cold water bath. Drain and place cut side up on an oiled baking sheet. Rinse and dry the herbs. Remove the leaves from the stems, finely chop, and sprinkle over the endive. Drizzle with lemon juice, and season to taste with salt, sugar, and pepper. Slice the goat cheese, and spread it over the endive. Drizzle with olive oil and bake in the oven for 5-6 minutes until golden brown. Serve on warmed plates and garnish with the rosemary.
