1 kilogram small, waxy potatoes
20 grams butter
cracked peppers
150 grams grated Fontina cheese
4 scallions

Preparation steps

1.

Rinse the potatoes and set in a steamer over a pan of simmering water and cook until tender, about 20 minutes.

Heat the broiler with the rack 6 inches from the heat.

Let the water evaporate from the potatoes and place them in a baking dish. Scatter knobs of butter over the potatoes, season with pepper and sprinkle with the cheese. Broil until the cheese has melted and the potatoes are golden brown, about 10 minutes.

4.

Rinse, trim and thinly slice the scallions.

5.

Remove the potatoes from the oven and serve sprinkled with scallions.
