130 grams sugar
6 egg yolks (Medium)
1 tsp Ground cinnamon
4 Tbsps red Red currant jelly

Preparation steps

1.

Peel apples and remove cores. Boil cider with cinnamon sticks, lemon juice and 100 grams (approximately 3 ounces) of sugar. Add apples, cover and poach for 8-10 minutes. Leave to cool in broth, preferably overnight.

2.

Whisk egg yolks with 100 ml (approximately 1/2 cup) of broth, remaining sugar and cinnamon in a saucepan. Beat over medium heat until thick.

3.

Coat apples with cinnamon sabayon. Top each apple with 1 tablespoon currant jelly and dust with cinnamon. Serve immediately.
