2 Tbsps lemon juice
300 grams sugar
2 tsps Ground cinnamon
1 tsp Gingerbread spice
350 grams ground, unshelled almonds
120 grams Pastry flour

2 Tbsps lemon juice

Preparation steps

1.

Peel the apple, quarter, remove the seeds and finely grate.

Beat the egg whites with a pinch of salt until stiff. Gradually sprinkle in the sugar. Beat until smooth. Beat in the lemon juice until stiff.

Add the cinnamon, gingerbread spice, almonds, flour and apple. Mix into a smooth dough.

Sprinkle flour on a work surface. Roll the dough out until about 5 mm (approximately 1/4 inch) thick. Use cookie cutters to cut out shapes. Place the cookies on a lined baking sheet.

Let dry overnight at room temperature.

Preheat the oven to 120°C (approximately 250°F).

Bake the cookies for about 25 minutes.

Mix the powdered sugar and lemon juice into a thick glaze. Spread the glaze on the cooled cookies, let dry and serve.
