35 grams softened butter
75 grams sugar
1 pinch salt
2 eggs
½ cube Yeast (21 grams)
2 Tbsps lukewarm milk
275 grams Pastry flour
250 grams Quark
½ untreated lemon (juice and zest)
Vegetable fat (for frying)
1 Apple
1 Tbsp raisins
Cinnamon sugar (to sprinkle)

Preparation steps

Whisk the butter, sugar, salt and eggs until frothy. Dissolve the yeast in the milk. Add the yeast to the flour and quark. Fold the flour mixture into the egg mixture. Add the lemon juice and lemon zest and knead well. The dough should be soft and should not stick to the bowl. If necessary, add more flour or milk. Cover the dough and let rest for about 30 minutes.

Rinse the apple, peel, remove the core and chop the flesh into small pieces. Chop the raisins and mix with the apple. Knead the apple and raisins into the dough. Divide into 10-12 portions. Shape the dough into balls and press slightly flat. Let rest for another 30 minutes.

Heat the frying oil to about 190°C (approximately 375°F). Fry the donuts in the hot oil until golden brown on both sides. Drain on paper towels and sprinkle with cinnamon sugar while still hot. Serve immediately.
