- For the apples
- 4 Apple
- 125 milliliters Apple juice
- 2 Tbsps jam sugar
- lemon juice
- For the nut brittle
- 25 grams Walnut (almonds and hazelnuts)
- 3 Tbsps sugar
- vegetable oil
- For the topping
- 400 grams Sour cream
- 2 Tbsps sugar
- 100 grams Whipped cream
- 1 packet Vanilla sugar
- mint
Preparation steps

For the apples, peel apples, quarter, core and cut into slices. Sauté apples and apple juice for about 3 minutes. Stir in jam sugar and simmer for another 3 minutes. Add a few drops of lemon juice to taste and chill.

For the nut brittle, coarsely chop almonds, hazelnuts and walnuts. Caramelize sugar. Coat nuts in sugar and spread on a lightly greased piece of aluminum foil. Let cool.

For the topping, mix sour cream with sugar. Whip cream and sprinkle in vanilla sugar. Mix cream and sour cream together.
4.
Break or chop brittle into pieces. Layer apple compote and cream mixture in a bowl and sprinkle with nut brittle. Serve garnished with mint.
