- 7 ½ cups rolled oats
- 1 ½ cups shelled Peanuts (unsalted)
- 1 cup roughly chopped Nut (e. g. hazelnuts, almonds, pecans or walnuts)
- ¼ cup butter
- ¼ cup sugar
- ½ cup honey
- 1 tsp lemon juice

Preparation steps
1.
Mix the rolled oats, peanuts and chopped nuts. Put the butter, sugar, honey and lemon juice into a pan and bring to the boil, stirring. Boil for 3-4 minutes, stirring constantly, until the mixture caramelises.

Add the prepared nut mixture and stir until all the nuts are coated in the honey caramel mixture.

Turn immediately onto a 24 x 40 cm baking tray lined with baking parchment and spread out.

Roll the mixture with a rolling pin to smooth it. After about 15 minutes cut into 4 x 8 cm bars. Leave to cool and store in a dry place. Warning! You will not be able to cut the brittle once it has gone cold!
