1 Lightly grease a rimmed baking tray with butter.
2 Put the sugar, salt and 125ml | 1/2 cup water into a wide saucepan. Stir over a medium heat until the sugar begins to melt. Once melted, increase the heat and cook for about 10 minutes, until the mixture turns a golden amber colour.
3 Remove the pan from the heat and immediately stir in the almonds. Spread the mixture over the baking tray using an oiled spatula.
4 Leave until completely cold before breaking into pieces to serve.
