Linseed, wholemeal flour and oat flakes enrich the bread with many dietary fibres. Especially flax seeds offer a lot more: Among other things, they contain a lot of essential omega-3 fatty acids, which have a positive effect on the blood vessels. In addition, the seeds are rich in magnesium and make the bread a superfood for strong nerves and physical and mental performance.

You can also replace the wholemeal spelt flour with wholemeal wheat flour. With 2 teaspoons agave syrup instead of honey, the bread also becomes interesting for vegan nutrition.

1 tsp sugar
50 grams flaxseed
50 grams Oats
50 grams Sunflower seed
1 tsp sugar beet syrup
1 tsp salt
1 tsp ground Caraway
2 Tbsps Garlic oil

Preparation steps

1.

Preheat the oven to 175°C (approximately 350°F). Cut the top off the garlic bulb and coat with olive oil. Season with salt and roast in the oven for about 20 minutes. Remove from the oven, let cool and then peel each clove. Rinse the figs and cut into quarters.

For the dough: Mix the flour, yeast and sugar together with 175 ml (approximately 3/4 cup) lukewarm water. Add a little water or flour, as necessary. Place in a bowl, cover with a cloth and let rest for about 1 hour in a warm place.

Combine the flax seeds, sunflower seeds and oats. Knead around 2/3 into the dough along with the corn syrup, salt and caraway. Continue kneading vigorously for 5-10 minutes, until smooth. Shape into a loaf and roll in the remaining seed and oat mixture.

Grease a baking sheet with a little oil, place the loaf on the baking sheet and score with a knife several times. Push in the roasted garlic and figs and let rise for about 30 minutes, covered.

Preheat the oven to 220°C (approximately 425°F). Fill a bowl with hot water and place in the oven. Spread the remaining garlic oil over the bread and bake for 15 minutes. Reduce the heat to 200°C (approximately 400°F) and bake for another 50 minutes.

6.

Remove from the oven and serve warm with butter and ham, if desired.
