Ingredients

For the cake
3 eggs (separated)
1 pinch salt
0.333 cup sugar
1 tsp vanilla extract
¾ cup all-purpose flour
cup Corn starch
¼ cup cocoa powder
For the filling
1 tsp Corn starch
¼ cup red Grape juice
3 Tbsps sugar
1 ½ cups cream (48% fat)
1 tsp vanilla extract
7 ozs mixed Berry (redcurrants, blueberries, raspberries, strawberries, etc.)
To decorate
white Chocolate cigarillo
18 ozs mixed Berry
powdered sugar

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. grease a 20cm|8" cake tin and line the base with non-stick baking paper.
2.
Whisk the egg whites with the salt until stiff, softly peaking. Gradually whisk in half the sugar until stiff.
3.
Whisk the egg yolks with the remaining sugar and vanilla until light and creamy.

Sift in the flour, cornflour and cocoa and stir until combined.
5.
Pour into the tin and bake for about 25 minutes until golden and springy to the touch. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.

Mix the cornflour with 2 tablespoons of juice until smooth.
7.
Heat the remaining juice with the sugar, then stir in the cornflour and bring to a boil. Cook, stirring, for 1-2 minutes, until the liquid thickens slightly. Mix in the berries and remove from the heat.
8.
Whisk the cream and vanilla until thick.
9.
Cut the cake horizontally through the centre and spread one half with half the berry filling.
10.
Place the other cake on top and spread with the remaining berry cream.
11.
Arrange the cigarillos around the cake, as in the photo and decorate with berries. Sift a little icing sugar over the top and decorate with mint leaves.
