Ingredients

For the cake
1 cup unsalted butter
5 ozs white chocolate (chopped)
2 cups caster sugar
1 cup milk
2 cups all-purpose flour
¾ cup self-rising flour
1 tsp vanilla extract
2 eggs (beaten)
For the icing
½ cup cream (48% fat)
11 ozs white chocolate (chopped)
To decorate
2 Tbsps coarsely grated white chocolate
2 Tbsps coarsely grated Milk chocolate (30% cocoa solids)

Preparation steps

1.
For the cake: heat the oven to 160°C (140° fan) 325°F gas 3. Grease a deep 20cm|8" cake tin and line with non-stick baking paper.

Heat the butter, chocolate, sugar and milk in a pan over a low heat, stirring until the chocolate has melted. Pour into a mixing bowl and set aside to cool for 10 minutes.

Sift both flours into the chocolate mixture, then add the vanilla and eggs. Whisk until smooth.

Put into the tin and cover with foil. Bake for 50-60 minutes until a thick sugary crust has formed on top of the cake. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.

For the icing: heat the cream in a pan and bring to a boil. Immediately remove from the heat and pour into a bowl.
6.
Add the chocolate and stir until the chocolate has melted. Cover and chill for about 30 minutes, until thick.
7.
Spread the icing over the top and sides of the cake. Sprinkle with the grated chocolate and leave to set.
