Wheat Berry Salad
Soak the wheat grains overnight in plenty of water.
Bring 800 ml of water (approximately 3 1/3 cups) of water and the wheat grains to a boil. Add salt, cover and simmer for one hour. Turn off the heat and let sit for another hour. Strain through a sieve.
Rinse the vegetables. Halve the bell peppers and remove seeds and ribs. Slice the cabbage and bell peppers into strips. Peel and dice onions. Heat the wheat germ oil in a pan and saute the vegetables for 10 minutes. Add the wheat grains and saute for another 5 minutes.
Add the cream, lemon juice, and curry powder and saute until warmed through. Season with salt and pepper and serve.
