Preparation steps
1.
Cook the wheat berries according to package directions in salted water.
Season the turkey breast with salt and pepper. Heat 1 teaspoon of oil in a pan and saute the turkey breast until golden brown. Keep warm.

Rinse tomatoes and finely chop. Rinse carrots and celery.
3.
Cut celery crosswise into slices. Cut carrots lengthwise into thin slices. Rinse arugula, shake dry and tear into bite-sized pieces.
4.
Cut turkey breast into strips.
5.
Stir together balsamic vinegar and remaining oil. Season with salt and pepper. Toss together all the salad ingredients and serve with turkey breast.
