- 150 grams finely ground Wheat
- ½ tsp salt
- 1 pinch ground Nutmeg
- ¼ l milk
- 4 Tbsps balsamic vinegar
- 2 Tbsps olive oil
- 500 grams Cherry tomatoes
- 2 garlic cloves
- 2 Avocados
- 1 bunch Basil
- 2 eggs
- Palm oil (for the pan)

Preparation steps

Mix the wheat berries, salt, nutmeg and milk to form a smooth batter and let it swell. Rinse the tomatoes, halve and quarter, then mix with the vinegar and oil. Peel the garlic cloves and squeeze through a press. Peel the avocados, remove the pits and dice, then mix the garlic and avocado with the tomatoes. Rinse the basil, shake dry, put aside a few leaves for the garnish, finely chop the rest, mix with the tomato salad, and let rest.

Meanwhile, whisk the eggs into the batter. Heat the palm oil in a non-stick pan and cook 4 crepes, in succession. Arrange the crepes on plates, spread the tomato salad inside, fold closed and serve garnished with basil leaves.
