- 250 grams Wheat grain (such as wheat berries)
- salt
- 60 grams dried Apricot
- 150 milliliters Apple juice
- 50 grams Shelled pistachio
- 4 stalks Celery
- 3 sprigs mint
- 40 milliliters olive oil
- ½ lemon (juiced)
- 1 tsp Agave syrup
- Apple (for garnish)

Preparation steps
1.
Prepare the wheat berries according to the package directions. Drain and let cool. Chop the apricots into small pieces and soak for about 30 minutes in the apple juice.

Coarsely chop the pistachios. Rinse and slice the celery. Rinse the mint leaves, pat dry and finely chop. Drain the chopped apricots and combine with the mint, pistachios, wheat berries, celery, olive oil, lemon juice and agave nectar. Let stand for at least 10 minutes so the flavors can infuse. Serve garnished with apple slices.
