- 11 ozs Bulgur
- boiling water
- 21 ozs ripe Tomatoes (finely diced)
- ½ bunch scallions (very thinly sliced)
- 1 stick Celery (finely chopped)
- 2 ½ ozs mint (finely chopped)
- 1 Tbsp snipped Chives
- ½ tsp ground allspice
- ½ tsp fine freshly ground Black pepper
- salt
- 1 lemon (juice)
- ⅔ cup extra virgin olive oil
Preparation steps
1.
Put the bulgur wheat in a bowl and just cover with boiling water. Set aside for 10 minutes to soften and absorb the liquid. Drain off any excess.
2.
Stir in the remaining ingredients and mix well together.
