boiling water
21 ozs ripe Tomatoes (finely diced)
½ bunch scallions (very thinly sliced)
1 stick Celery (finely chopped)
2 ½ ozs mint (finely chopped)
1 Tbsp snipped Chives
½ tsp ground allspice
½ tsp fine freshly ground Black pepper
salt
1 lemon (juice)
cup extra virgin olive oil

Preparation steps

Put the bulgur wheat in a bowl and just cover with boiling water. Set aside for 10 minutes to soften and absorb the liquid. Drain off any excess.
