¼ cup caster sugar
¼ cup water
4 cups cubed Watermelon
2 cups small Strawberries (hulled and chopped)

Preparation steps

1.
Put the sugar and water into a small pan. Heat until the sugar has dissolved. Boil for 2-3 minutes until slightly reduced and syrupy. Leave to cool completely.

Put the watermelon and strawberries into a food processor and blend until smooth. Push the mixture through a sieve.
3.
Mix the purée and cooled syrup together and then pour into ice lolly moulds and freeze.
