3 ½ Tbsps Rice syrup
¾ oz Crème fraiche (1 TBSP.)

Preparation steps

1.

Peel the watermelon and cut it into pieces, set aside 4 ounces of melon, and remove seeds from the rest. Clean, wash and chop 6 ounces of strawberries. Halve the lime and squeeze out the juice. Wash the mint, shake dry and pluck the leaves.

Finely puree melon, strawberries, lime juice, rice syrup and mint. Stir in crème fraîche.

Pour mixture into 6 ice cream molds. Let freeze for about 1 hour, then insert wooden sticks and freeze for another 3 hours.

4.

To serve, release ice cream from ramekins. Clean, wash and quarter remaining strawberries. Arrange ice cream with strawberries and melon pieces set aside.
