- 400 grams Strawberries (rinsed and hulled)
- 100 grams sugar
- 1 Lime (juice and zest)
- 1 fresh egg white
- Plastic Containers

Preparation steps

Puree strawberries in a blender.

Boil sugar with 4 tablespoons water until syrupy. Let cool, then mix with strawberry puree. Stir in lime juice and zest. Beat egg white until stiff and fold into puree. Pour mixture into a shallow metal container and place in freezer. Stir mixture occasionally, to prevent large ice crystals from forming.
3.
When mixture is half frozen, pour into cups, insert popsicle sticks and freeze until solid, 2-3 hours.
