- 1 onion
- 40 grams butter
- 25 grams Pastry flour
- 200 milliliters white wine
- 500 milliliters clear Broth (finished product)
- 200 grams cream cheese
- 2 bunches Cress
- salt
- freshly ground pepper
- 1 pinch freshly grated Nutmeg
- 1 pinch sugar
- 1 smoked Mackerel (about 200 grams)

Preparation steps
1.
Peel and chop the onion. Heat the butter in a pot. Saute the onion until soft. Sprinkle with flour and saute briefly. Deglaze with the white wine and broth. Stir in the cream cheese and bring to a boil.
2.
Chop the cress and set some aside for the garnish. Stir the remaining cress into the soup. Do not boil. Season with salt, pepper, nutmeg and sugar.
3.
Chop the mackerel into bite size pieces and place in a dish. Pour in the soup and serve garnished with watercress.
