7 ozs Celery
½ bunch parsley (about 1 ounce)
2 handfuls Watercress
2 diced shallots
2 chopped garlic cloves
2 Tbsps vegetable oil
26 ozs Vegetable broth
6 ozs Whipped cream
2 Tbsps Sour cream
salt
freshly ground peppers
freshly grated Nutmeg

Preparation steps

1.

Peel and dice the celery.

2.

Rinse the watercress and drain well. Chop coarsely.

3.

Chop the parsley. Set aside a few leaves for the garnish.

4.

Saute the celery, shallots and garlic in hot oil until translucent. Deglaze with the vegetable broth. Simmer for about 15 minutes. Add the chopped parsley and watercress. Puree finely and stir in the cream and sour cream. Simmer for another 2 minutes. Season with salt, pepper and nutmeg. Serve garnished with parsley.

Your recipe my not be complete......It reads 1/2 parsley . What is the amount??
