1 garlic clove
100 grams starchy potatoes
2 Tbsps butter
2 Tbsps Pastry flour
150 milliliters dry white wine
750 milliliters Vegetable broth
salt

120 grams Watercress
1 Tbsp Crème fraiche

Preparation steps

Peel onion, garlic and potatoes and dice finely. Melt butter in a saucepan and saute chopped onion with garlic until translucent. Add potatoes, stir in flour and then add wine. Add broth, mix, bring to a boil and season with salt and pepper. Reduce heat slightly and simmer for about 20 minutes while stirring occasionally.

Rinse watercress, pat dry and pluck from stem. Add to the pot and puree everything with an immersion blender. Boil down a little or add broth as needed to reach desired consistency. Remove from the heat, stir in the crème fraîche and season to taste.

Pour soup in bowls or cups and serve if desired with crackers.
