- 2 Chicken breasts
- 100 milliliters white wine
- 100 milliliters Vegetable broth
- 250 grams Celery root
- 2 tart Organic apples
- juice of lemons
- 100 grams Whipped cream
- salt
- peppers (freshly ground)
- 1 pinch sugar
- 100 grams Lettuce (your choice, such as oak leaf or lettuce)

Preparation steps
1.
Bring the white wine and vegetable broth to a boil, then reduce the heat to a simmer, add the chicken breasts and poach 15 minutes. Lift out of liquid, drain on paper towels and allow to cool. Cut into strips.
2.
Rinse the apples, cut into quarters, cut out the cores and coarsely grate. Peel celery and grate coarsely. Sprinkle both with lemon juice.
3.
Whip cream until stiff and mix with apples and celery. Season with salt, pepper and sugar. Arrange the Waldorf salad on lettuce leaves with chicken breast strips.
4.
Serve sprinkled with a little freshly ground pepper.
