250 grams Spelt flakes
250 milliliters Vegetable broth
1 Red onion
50 grams mixed Lettuce
4 Vine tomatoes
1 Tbsp Sesame seeds
1 Tbsp cornstarch

80 grams breadcrumbs
5 Tbsps Canola oil
12 black Olives

Preparation steps

1.

Combine spelt flakes with hot broth, cover and let swell for 1 hour. In the meantime, peel onion and cut into rings. Rinse lettuce and spin dry. Rinse tomatoes and cut into wedges.

Mix sesame seeds and cornstarch with spelt mixture and season with salt and pepper. Dice sheep milk cheese. Add diced cheese to spelt mixture, form flat patties and coat each patty with breadcrumbs.

3.

Heat canola oil in large, non-stick pan and fry patties for 5 minutes on each side until golden brown. Arrange salad on plates as a bed and distribute patties on top. Garnish with tomatoes, olives and onion rings.
