Preparation steps

Sweat scallions in 1 tablespoon butter until translucent, ​​add spelt and sauté, deglaze with the broth and let simmer for about 10 minutes at very low heat. Stir in the cheese, remove from the pan and let cool.

Rinse, peel and cut the carrots into long strips. Heat the butter, lightly saute the carrots, pour in 1/2 cup of water, season with salt and pepper and simmer covered for about 5 minutes, uncover, and if liquid is still present, let it evaporate over high heat. Sprinkle the carrots with sugar, stir and caramelize slightly, mix in the mustard, and season with salt and pepper.
