3 ½ ozs slightly stale Bread (cubed)
2 eggs
salt
peppers
grated Nutmeg
paprika
½ cup Cottage cheese
½ red Bell pepper (very finely diced)
1 can sweet Corn (kernels)
1 small Zucchini (diced)
3 Tbsps chopped Chives
2 Tbsps breadcrumbs
Oil (for frying)
To serve
1 large French bread (or baguette)
8 Lettuce
1 Tomato (sliced)
tomato Ketchup

Variation: replace the cheese with finely chopped firm tofu.

Preparation steps

1.
Put the bread cubes into a bowl. Whisk the eggs with salt, pepper, nutmeg and paprika and pour over the bread. Leave to stand for 10-15 minutes.

Add the cottage cheese, vegetables and chives to the bread mixture and mix well. If the mixture is too soft to shape, gradually add the breadcrumbs. Mix well and leave to stand for 5 minutes.

Shape the mixture into 8 small burgers.

Heat the oil in a frying pan, to a depth of about 2.5cm|1". Cook the burgers for a few minutes on each side until golden brown. Drain on absorbent kitchen paper.
5.
Slice the baguette into 4 pieces. Place 2 burgers in each piece and add the lettuce and tomatoes. Serve with a small bowl of tomato ketchup.
