Preparation steps
1.
Rinse and halve one lemon. Place cut-side down on a work surface and thinly slice. Squeeze juice from remaining lemon.
2.
Rinse and spin parsley dry. Remove any thick stems.
3.
Divide smoked fish among plates and sprinkle with about half of the lemon juice. Garnish with lemon slices and parsley sprigs.
4.
Rinse and quarter tomatoes.
5.
Rinse, trim and thinly slice fennel. Rinse, peel and finely grate celery root.
6.
Mix tomatoes with fennel and celery root. Season with salt, pepper and remaining lemon juice. Arrange salad on a platter and serve with smoked fish.
