400 grams Sauerkraut
2 sour Apple
½ lemon (juiced)
1 white onion
2 small red onions
3 Tbsps apple cider vinegar
5 Tbsps sunflower oil
salt
freshly ground peppers
1 pinch sugar
1 handful Dill 30 grams (approximately 1 ounce)
4 slices Smoked salmon
400 grams mixed Smoked fish (such as trout, halibut, mackerel, etc.)
Dill flower (for garnish)

Preparation steps

Place the sauerkraut in a colander, drain well and dice. Rinse the apples, quarter and remove the core. Cut one apple into small cubes and cut the others into thin columns. Sprinkle both immediately with lemon juice. Peel the white onion, finely chop and place in a large bowl. Add the vinegar and the oil, mix well and season with salt, pepper and sugar.

Add the sauerkraut and apple pieces into the bowl with the dressing and mix well. Peel the red onions and cut into rings. Rinse the dill and shake dry. Divide the fish into bite size pieces. Distribute the onion rings, apple slices and the fish and the dill on top of the sauerkraut. Serve with garnished with dill flowers.
