- 400 grams Smoked fish (such as mackerel, halibut, herring)
- 400 grams cooked Boiled potato
- 1 red Apple
- 2 Tbsps lemon juice
- 2 onions
- 100 grams Bacon
- 100 grams butter
- 4 Tbsps vegetable oil
- 4 Tbsps Herb vinegar
- 5 Tbsps Apple juice
- sugar
- freshly ground pepper
- salt
- ½ bunch Chives
- ½ bunch flat-leaf parsley
- ½ Tarragon
- 3 Tbsps Horseradish cream
Preparation steps

Chop fish finely. Peel potatoes and chop finely. Quarter and core apple, dice into cubes and sprinkle with lemon juice, combine with potatoes and fish. Peel onions and chop finely. Cut bacon into cubes. Heat 2 tablespoons of butter 3 tablespoons of oil in a pan and cook bacon for a few minutes. Add onions and saute briefly. Deglaze pan with vinegar and apple juice and season with sugar, salt and pepper. Pour over the salad. Rinse herbs, shake dry and pluck off leaves, chop and sprinkle over the salad, mix well. Whisk remaining butter until fluffy and mix with horseradish. Season butter with salt and pepper to taste. Serve salad with bread and horseradish butter.
