250 grams stale white bread
400 grams carrots
2 onions
2 garlic cloves
150 grams Bacon
1 Tbsp vegetable oil
½ bunch Arugula
salt
freshly ground peppers
Nutmeg
350 milliliters milk
125 grams Mascarpone
4 eggs
100 grams grated Gruyere
2 tsps chopped rosemary

Preparation steps

1.

Cut white bread into small bite-size pieces. Peel and coarsely grate the carrot..

Peel the onions and garlic and chop finely.

3.

Cut bacon into small cubes and cook in a large skillet in hot oil. Add carrots, onions and garlic and cook for about 10 minutes.

4.

Rinse arugula, shake dry and chop coarsely. Stir into vegetables in skillet. Stir in bread. Season with salt, pepper and nutmeg.

5.

Divide among 4 greased small baking dishes (or a large baking dish).

6.

Whisk milk, mascarpone and egg. Pour over the top and sprinkle with cheese and rosemary.

7.

Bake in preheated 200°C (approximately 400°F) oven for about 40 minutes. Serve with a crisp salad.
