1 Red chili pepper
4 scallions
1 Avocado
6 ozs Corn kernel (canned)
2 handfuls cilantro
8 Whole-wheat tortillas
6 ozs vegan shredded Cheese
Chili powder (to taste)

Preparation steps

Rinse the bell peppers and chilli pepper, cut in half, remove the ribs and seeds, and dice. Rinse the scallions and slice thinly. Peel the avocado, cut in half, remove the seed and dice the flesh. Drain the canned corn and coarsely chop the cilantro.

Lay 4 tortillas flat and sprinkle with half of the vegan cheese. Evenly distribute the vegetables onto the tortillas along with half of the cilantro. Sprinkle with the remaining cheese and top with the remaining tortillas. Place on a preheated grill or in a preheated oven for about 10-15 minutes, flipping once halfway through, until the tortillas are golden brown and the cheese has melted.

Remove the quesadillas from the grill or oven and slice into wedges. Garnish with the remaining cilantro and sprinkle with chilli powder to taste.
