- non-fat cooking spray
- 4 large gluten-free tortillas
- 2 cups firm dairy-free cheese (grated)
- 3 cups baby Spinach (washed)
- salt
- freshly ground Black pepper
Preparation steps
1.
Coat a large saute pan with non-fat cooking spray. Heat over a medium heat and lay a tortilla down in the pan.
2.
Top with half the the cheese and the spinach. Season with salt and pepper and top with another tortilla, pressing down with a spatula.
3.
Cook for 3 - 4 minutes until golden underneath. Flip the quesadilla and press down with the spatula, cooking for a further 2 - 3 minutes until golden underneath.
4.
Repeat with the remaining tortillas, cheese, and spinach to make another quesadilla.
5.
Cut the quesadillas into slices and serve.
