1 Tbsp Almond flour

1 pinch salt
3 Tbsps Powdered sugar from erythritol
½ Vanilla bean (scraped)
7 ozs low fat Cottage cheese
1 tsp cornstarch
cinnamon
1 splash lemon juice
2 Oranges
2 Kiwi
1 handful Blueberries (fresh or frozen)

Preparation steps

1.

Grease ramekins with butter and sprinkle with almond flour, knock out excess flour. Separate the eggs. Beat egg whites with 1 pinch salt until stiff, gradually adding 2 tablespoons powdered sugar. Continue beating egg whites until very stiff and peaks form. Scrape seeds from vanilla bean.

Beat the egg yolks with the vanilla seeds, cottage cheese, cornstarch, 2 pinches of cinnamon, and lemon juice until smooth. Slide the beaten egg whites onto the mixture and gently fold in with a pastry spatula.

Fill the ramekins with the mixture to just below the rim and bake in a preheated oven at 200 °C / 400 °F on the bottom rack for 12-15 minutes, and DO NOT open the oven door!

Meanwhile, peel oranges so that all white is removed and cut out fruit fillets between the separating skins. Peel kiwis, cut in half lengthwise and slice crosswise. Wash blueberries and pat dry. Remove soufflés from the oven, arrange on plates with the prepared fruit and lightly dust everything with the remaining powdered sugar.
