Ingredients

For the tacos
400 grams potatoes
salt
1 handful cilantro
1 small red chili pepper
4 Tbsps white balsamic vinegar
50 milliliters olive oil
peppers (from the mill)
3 cans Tuna
½ Red Bell pepper
50 grams salad (greens)
8 Taco shells (Fried tortilla shells)
2 Avocados
100 grams Sour cream

Preparation steps

For the salsa: Peel the potatoes and cut into small cubes. Bring a pot of salted water to a boil, and boil potatoes for about 10 minutes. Drain in a colander. In the meantime, rinse the cilantro, shake dry and chop. Rinse the chili pepper, remove the seeds and chop.

In a bowl, combine the potatoes, cilantro and chilli pepper. Mix well with the vinegar and the olive oil, seasoning with salt and pepper. Let marinate for 20 minutes.

For the taco filling: Drain the tuna in a colander and seperate with a fork. Rinse, trim, and finely chop the bell peppers.

Mix the tuna and diced bell peppers, season with salt and pepper.

Rinse the lettuce and spin dry. Fill the taco shells with mixed green salad then top with tuna.

Halve the avocados, removing the pit and skin, and dice. Gently mix the avacados with the salsa.

Place the salsa in small bowls and top each taco with a dollop of sour cream. Serve immediately.
