16 sheets Spring roll dough sheet
500 grams Tuna
salt
freshly ground peppers
2 Tbsps white Sesame seeds
1 Tbsp black Sesame seeds
5 scallions
1 bunch cilantro (30 grams)
1 Tbsp lemon juice
2 Tbsps melted butter
Fat (for frying)
For garnish
100 grams Sprout

Preparation steps

1.

Soak the spring roll sheets in cold water. Remove and place on a kitchen towel next to each other.

Rinse the tuna, pat dry and cut into 2 cm (approximately 1 inch) wide and 5 cm (approximately 2 inch) long pieces. Season with salt and pepper.

Mix the sesame seeds. Rinse and trim the scallions and cilantro, shake dry, finely chop and mix with lemon juice. Press the tuna pieces into the sesame seeds on one side and coat the other side with the onion-cilantro mixture.

4.

Lay the 2 sheets of dough over each other, brush with a little butter, place a piece of fish on it, fold the sides inward and roll tightly. Fry until golden brown in a pan with hot oil (2-4 minutes). Remove, drain on paper towels and serve with a small sprout salad.
