1 Tbsp sesame oil
1 shallot (peeled, finely chopped)
5 cups young Spinach (washed, shaken dry)
1 tsp Lime juice
12 ozs Tuna (sushi quality)
2 Tbsps Sesame seeds (black and white)
4 Tbsps light Fish sauce

Preparation steps

1.
Heat the oil in a pan and fry the shallot gently until soft. Stir in the spinach and fry until it collapses. Season with lime juice, salt and ground black pepper and remove from the heat.
2.
Slice the tuna into long pieces and roll them in sesame seeds. Slice into 4-5mm thin slices.
3.
Place the lukewarm spinach on plates and lay the tuna slices on top. Sprinkle with the remaining sesame seeds and drizzle with fish sauce to serve.
