4 ½ cups all-purpose flour
¾ oz Yeast (OR 7 g dried yeast)
½ tsp sugar
1 cup lukewarm milk
¼ cup softened butter
1 egg
1 tsp salt
2 Tbsps milk
0.333 cup Sesame seeds

Preparation steps

1.
Sieve the flour into a bowl and make a well in the centre. Dissolve the yeast with the sugar in a little of the lukewarm milk (crumble fresh yeast if using). Pour the mixture into the well and mix with a little of the flour to form a yeast starter. Cover and leave in a warm place for around 30 minutes to start working.

Add the rest of the milk, the butter, the egg and the salt and knead to form a smooth dough. Cover and leave for 1 hour to rise.
3.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
4.
Knead the dough thoroughly once more and divide into approximately 15 portions. Shape into small, round rolls and place on the tray. Cover and leave to rise again for 30 minutes.
5.
Brush with the milk and sprinkle over the sesame seeds. Bake in the oven for approx. 20 minutes until golden. Cool on a wire rack.
