1 Mix the wasabi paste with 1 tablespoon water. Season the tuna sticks with salt and pepper.
2 Brush the tuna sticks with the wasabi and roll in the chopped herbs.
3 Lay one fish stick on each sheet of spring roll pastry.
4 Whisk the egg yolk with the remaining water and brush the edges of the pastry and roll up.
5 Heat the oil in a deep pan and fry the rolls in batches for about 5 minutes until golden brown.
6 For the dip: mix the lime juice and soy sauce and serve with the tuna rolls.
