Tuna Salad with Chopped Eggs

Whether in oil or in its own juice - canned tuna is very popular. However, tuna is one of the fish threatened with extinction by overfishing. So you should enjoy it rather rarely and quite consciously.
Rinse the lettuce, spin dry and cut up into bite size pieces. Rinse the scallions and cut into thin rings. Rinse the tomatoes and cut into quarters.
Drain the tuna and fluff with a fork to separate.
Peel and chop the eggs.
Whisk together the vinegar, mustard, salt, pepper and sugar and oil. Arrange salad ingredients on plates and sprinkle with the salad dressing.
