1 head Romaine lettuce (shredded)
1 head Frisée (shredded)
½ bunch Watercress (torn)
6 slices cooked Bacon (diced)
2 ripe Avocados (pitted, peeled and chopped)
12 ozs cooked Chicken breasts (diced)
2 tomatoes (chopped)
2 hard-boiled eggs (separated, the yolk finely chopped and the white finely chopped)
½ cup grated Cheese
2 Tbsps chopped Chives
For the dressing
¼ cup Red wine vinegar
1 Tbsp Dijon mustard
1 tsp sugar
salt
peppers
½ cup extra virgin olive oil

Preparation steps

Mix together the salad leaves and place in a salad bowl.

Arrange the bacon, avocado, chicken, tomatoes, egg yolks, and whites and cheese over the leaves, as in the photo. Sprinkle with the chives.

For the dressing: whisk together the ingredients and serve with the salad.
