1 cup ham
1 Cucumber (peeled and diced)
1 head Lettuce (washed; cored and roughly torn)
3 cups cherry Tomatoes (washed; trimmed and halved)
1 bunch fresh Radish (cleaned; trimmed and sliced)
1 cup frozen Corn kernel (thawed)
1 red Bell pepper (washed; trimmed and diced)
1 cup grated Cheddar cheese
1 handful fresh Chives (snipped)
4 hard-boiled eggs (peeled and quartered)
For Vinaigrette Dressing
¼ cup white balsamic vinegar
2 tsps Honey Dijon mustard
½ cup good quality olive oil
salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

In a large salad bowl, combine diced ham, cucumber, lettuce, tomatoes, radishes, corn, bell pepper, cheese and chives. Toss to mix. Chill until ready to serve.
