- 1 cup ham
- 1 Cucumber (peeled and diced)
- 1 head Lettuce (washed; cored and roughly torn)
- 3 cups cherry Tomatoes (washed; trimmed and halved)
- 1 bunch fresh Radish (cleaned; trimmed and sliced)
- 1 cup frozen Corn kernel (thawed)
- 1 red Bell pepper (washed; trimmed and diced)
- 1 cup grated Cheddar cheese
- 1 handful fresh Chives (snipped)
- 4 hard-boiled eggs (peeled and quartered)
- For Vinaigrette Dressing
- ¼ cup white balsamic vinegar
- 2 tsps Honey Dijon mustard
- ½ cup good quality olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps

In a large salad bowl, combine diced ham, cucumber, lettuce, tomatoes, radishes, corn, bell pepper, cheese and chives. Toss to mix. Chill until ready to serve.
