Tuna Salad on Toast with Seasoned Butter
- For the tuna salad on toast
- 4 slices Toast
- 2 cans organic Tuna in oil
- 4 ripe tomatoes
- 1 white onion
- 3 tablespoons Caper (in brine)
- ½ Cucumber
- 2 tablespoons finely chopped parsley
- lemons (juiced)
- 2 tablespoons olive oil
- freshly ground peppers
For the seasoned butter, mix butter well with parsley, salt, paprika and chili powder and refrigerate.
For the tuna salad on toast, drain tuna and chop coarsely. Rinse tomatoes, cut in half, remove seeds and cut into small cubes. Drain capers. Peel cucumber and cut into small pieces. Peel onion and chop finely. Mix tuna with capers, tomatoes, cucumber, onion, parsley, lemon juice and oil. Season with salt and pepper. Toast bread and spread with a generous coating of seasoned butter. Cut diagonally, top with tuna salad and serve immediately.
