- 200 grams dried, white Beans
- 150 grams Dry sausage
- 1 onion
- 2 garlic cloves
- 2 sprigs thyme
- 2 sprigs oregano
- 1 Tbsp olive oil
- 500 pieces Tomatoes (canned)
- 350 milliliters Broth
- salt
- freshly ground peppers

Preparation steps

Rinse the beans in a sieve and let soak in cold water overnight. The next day, peel the salami and cut into thin slices. Peel the onion and garlic. Rinse the herbs, shake dry and finely chop the leaves. In a saucepan heat the oil and briefly cook the salami. Add the onion and garlic and sweat until translucent.

Strain the beans, drain and add to the pot. Pour in the tomatoes and the broth, season with salt and pepper, stir in the herbs and let everything simmer over medium heat for 40-45 minutes. Season the soup again, fill in preheated soup bowls and serve with fresh herb white bread.
